Southern Italy Wine dinner

This will be a really special evening, featuring Southern Italian dishes from Allison (owner) and Adrienne's (executive chef) family. Each of the 3 courses will be paired with a fantastic Italian wine. Here's the menu:

Appetizer:
Clams with hand-made spinach cavatelli, Calabrian chili butter, lemon, and garlic breadcrumbs

This was Chef Adrienne's mother's signature dish, and one that Adrienne has adapted to make her own. She's excited to recreate it for you in remembrance of her mother.
Wine Pairing: Greco de Tufo

Main Course:
Grandma's slow simmered pork neck ragu with fresh casarecce

This recipe was passed down from Great-Grandma Domenica, to Grandma Louise to Allison. It was Louise's favorite dish, and one that Allison would help cook as a child for Sunday family dinner.
Wine Pairing: Taurasi Aglianco

Dessert:
Homemade olive oil cake with candied oranges, ricotta, Sicilian pistachios

Olive oil cake is found in many regions in Italy, and varies depending on the olive you use. We are making a Sicilian version, with pistachios and citrus.
Wine Pairing: Lambrusco Sorbara
